Hey ya'll! I didn't know I would get a big response by posting my picture of my sausage stew here. I wouldn't say it's a perfect measured recipe, I usually eyeball things and taste to make sure it's seasoned to my liking. Make sure you have a pretty good medium to large pot. Ya'll gonna need sausage, carrots, potatoes, okra, onion, bell pepper, tomato sauce, and macaroni.
This was my response to the overwhelming comments I got in a Facebook group for stew lovers. I'm a huge fan of stew and I make it year round, but Autumn has begun astronomical today September 22, 2026, even though the weather is still hella hot! Stews are comfort for me. I love when I take a bite and it slides down my throat and just warms my soul.
My mother used to make stews a lot growing up and it was my all‑time favorite during the cold months. She would make flavorful chicken stews with a side of corn cakes she would fry up like pancakes — omg delicious! When I grew up and had my own family, I made stews for my children and husband back then, but now living alone I wanted a different kind of stew. One day I was craving one with sausages, so I started adding things that would taste so damn good and it turned out so yummy. In that Facebook group I saw so many different yummy stews and how people put their own love in them.
Before we jump into the recipe, here are a few comforting things you can add to stews to make them even better, depending on what you like:
Extra vegetables like corn, peas, celery, or zucchini to bulk it up.
Different sausages — spicy, turkey, beef, or smoked — for deeper flavor.
Beans like navy beans or pinto beans to make the stew thicker and heartier.
Pasta, rice, or barley if you want it extra filling.
Herbs like thyme, bay leaves, parsley, or paprika to boost the flavor.
A splash of broth or tomato sauce to make it richer and more comforting.
Sausage Stew Recipe
Ingredients
1 pack of Chappell Hill Original smoked sausage, or your favorite
8 oz can tomato sauce
2 or 3 cups elbow macaroni or egg shell macaroni, small
2 or 3 cups baby carrots, whole or sliced, or regular carrots sliced (I slice the baby carrots now when I make the stew so they don't take forever to get soft.)
1/2 yellow onion, chopped
1 green bell pepper, sliced into medium pieces
5–7 potatoes, cut in medium cubes
16 oz–3 cups small bag frozen cut okra (I don't use all of it, just enough for me.)
Seasonings: salt, black pepper, onion powder, optional Italian seasoning, couple sprinkles
Instructions
I put my sliced sausages, bell pepper, and onion in my pot first. Fill the pot with water, not too full. Turn the stove on medium heat, then I season the water with salt, pepper, and onion powder. Stir, then taste the seasoned water with a spoon to make sure it's salted enough for me.
Cover halfway because that steam be steamin lol! Let the sausage get halfway done, then throw in your sliced carrots. Let those cook until almost soft.
Then add your cubed potatoes, macaroni, and tomato sauce. Cover the pot. When a fork can go through the potato firmly and the macaroni is al dente, it's time to add the frozen okra.
Cover and cook a few more minutes until those okra are done.
I make me a bowl and add a couple dashes of Louisiana hot sauce and top with Colby Jack shredded cheese and a side of crackers. Good! Sometimes when I make stews, I like to switch things up depending on what I’m craving. Stews are one of those dishes you can play with and they still come out good. Sometimes when I like to play around with easy comfort food and switch things up in the kitchen, I try fun experiments like my Taco Spaghetti recipe!" Trina, I love stews too, and they are a great way to use up lots of bits and pieces in the frig, however onions and carrots are pretty essential. I like to have lots of frozen vegetables on hand, but I never thought of looking for frozen okra. I'll have to check it out at our local supermarket. A stew goes a long way to feed a crowd.
