Easy Double Peach Crumble for One (Or More!)

 I’ve always been a sweet tooth girl and wanted to make something rich and satisfying after a good meal. I'm pretty good at making sweet treats for myself, but I do miss making treats for my kids when they were young. Now it's just me, and I enjoy baking for myself and having something cozy and homemade waiting after dinner.

I went in search online for something easy and that doesn’t require a ton of ingredients. In this recipe, I wanted to double it because I had this big baking dish. I’m also limited on prep tools, so I used what I had and kept it simple. I didn’t have cornstarch for thickening, so I used flour instead, and it still came out nice and thick and full of peach flavor.

This easy peach crumble is perfect when you want something sweet, warm, and comforting without spending all day in the kitchen. The peaches get soft and bubbly, and the crumble topping turns golden and crisp on top. It’s the kind of dessert you can throw together, bake while you relax, and then enjoy warm out of the oven.

Peach Filling (Doubled)

  1. 8 cups sliced peaches (fresh, frozen, or drained canned slices)

  2. ¼ cup brown sugar (4 tablespoons)

  3. 2 tablespoons all‑purpose flour (used instead of cornstarch for thickening)

  4. 2 teaspoons lemon juice

  5. 1 teaspoon ground cinnamon

  6. ½ teaspoon salt

Crumble Topping (Doubled)

  1. 1 ½ cups all‑purpose flour

  2. 1 ½ cups rolled oats

  3. 1 cup brown sugar

  4. 1 teaspoon ground cinnamon

  5. ½ teaspoon salt

  6. 1 cup cold unsalted butter, cubed (2 sticks)

Instructions

  1. Preheat the oven Preheat the oven to 375°F (190°C) and lightly grease a 9x13‑inch baking dish.

  2. Mix the filling Toss the peach slices with the brown sugar, flour, lemon juice, cinnamon, and salt in a large bowl. Make sure the peaches are evenly coated so the flour can help thicken the juices as they bake. Spread the peach mixture evenly into your baking dish.

  3. Make the topping In a separate bowl, mix the flour, oats, brown sugar, cinnamon, and salt until everything is combined.

  4. Add the butter Add the cold cubed butter to the topping mixture. Use your fingers or a pastry cutter to work the butter into the dry mix until it forms chunky, pebble‑sized crumbs. You want little clumps so the topping bakes up crisp and golden.

  5. Assemble and bake Scatter the crumble topping evenly over the peaches. Bake for 40 to 45 minutes until the top is golden brown and the peach filling is bubbling vigorously around the edges.

  6. Cool and serve Let it rest for about 15 minutes to allow the juices to thicken up before serving warm. You can enjoy it plain or with a scoop of ice cream or whipped cream.

Simple Peach Crumble Tips

  1. Use slightly firm peaches so they hold their shape while baking and don’t turn mushy.

  2. If using canned peaches, make sure they are well drained so the filling doesn’t get too watery.

  3. Keeping the butter cold helps the crumble topping bake up crisp and crumbly instead of greasy.

  4. If you like extra crunch, you can add a handful of chopped nuts to the topping mixture.

  5. Taste your peaches before mixing; if they’re very sweet, you can slightly reduce the brown sugar in the filling.

This was a very delicious treat! Next time I may leave out the oats because when I reheated in the microwave they were a bit chewy. I recommend letting it cool down for 15 mins, then have a piece.
