Okra and Shrimp With Tomatoes Topped On Rice

If you’re craving something new to eat, this is the meal for you. It’s comforting and so so delicious. It doesn’t take a lot of ingredients and you can season it just the way you like. This recipe is supposed to have wine, but I didn’t have any and it still turned out so yummy!. When you make this, top it with nice white rice.

This dish right here is one of those meals that feels like home. It’s simple, but it tastes like you really put you foot into it. The shrimp cooks down in that buttery lemon sauce, the okra gets soft, and the tomato brings everything together. It’s warm, cozy, and full of flavor without you having to be in the kitchen all day. When you start cooking it, your kitchen is gonna smell so good. That butter melting with the olive oil, the onions sautéing, the Cajun seasoning hitting the pan ,it all comes together and makes you want to grab a bowl before it’s even done lol!. It’s one of those dishes where you’re stirring the skillet and already thinking about that first bite. And the best part is you don’t need anything fancy. Just a skillet, a few ingredients, and a little patience while everything simmers. I wished I showed more pictures for the steps, but the finished dish is just fine.

Ingredients

1 pound of raw large or medium shrimp 1 medium tomato Half of a large onion or one small onion, chopped Small bag of frozen okra, cut 1 teaspoon of parsley 2 tablespoons of olive oil 3 tablespoons of butter 2 tablespoons of lemon juice, freshly squeezed ½ cup of water or dry white wine 1 teaspoon of Tony Chachere seasoning or Cajun seasoning of choice Salt and pepper to taste

Prep time about 10 mins, Cook time about 20 mins

As for Okra, they don't have to be frozen. but I use frozen and they thawed just fine while cooking. For the lemon juice, if you don't have the lemon just use 100% real juice in the bottle.


Instructions

Heat the olive oil and butter in a skillet. Let the butter melt. Add in your onions and frozen okra. Cook until the onion and okra are soft. Add in the tomato and stir until soft. Add in the lemon juice, Cajun season, parsley, and water. Let it simmer. You can taste to see if you will need the salt and pepper. Add in your shrimp and let simmer until they are done, but not overcooked. You may get a little sticking to the pan, but that’s what makes it taste so good. Stir the sticky goodness. When it’s ready, top it with hot rice and it's enough for two people can eat off this dish.

This meal is one of those things you make when you want something comforting but not heavy. The lemon juice gives it that fresh pop, the butter makes it rich, and the Cajun seasoning brings the flavor. The okra cooks down and gets soft, and the shrimp stays tender if you don’t overdo it. Every bite has a little bit of everything ,shrimp, okra, tomato, and that sauce soaking into the rice.

I like that you can make this with wine or without it. If you have wine, use it. If you don’t, water works just fine. The butter and lemon carry the flavor anyway. That’s real cooking — using what you’ve got and still ending up with something good. You don’t have to run to the store for one ingredient just to make dinner taste right.

When you’re cooking the shrimp, don’t walk away because Shrimp cooks fast, and once it turns pink, it’s basically done. If you let it go too long, it gets rubbery and you don't want that. Just let it simmer in that sauce until it’s tender. And yes, the little sticky bits on the bottom of the pan? Stir them in. That’s flavor. That’s the part that makes people ask what you put in it.

Serve it over hot white rice. The rice catches all that buttery lemon sauce and makes the whole dish feel complete. You can use jasmine rice, long grain, whatever you have. Just make sure it’s hot and fluffy. If you want to dress it up, sprinkle a little parsley or green onion on top. If you like heat, add a splash of hot sauce. Make it your own.

This dish is also great for leftovers, and you can store it for about 2 days. The flavors settle overnight and taste even better the next day. You can warm it up and put it over fresh rice or mix it all together like a bowl. It’s one of those meals that doesn’t get old.

If you want to tweak it, you can. Add garlic powder, smoked paprika, or even a little cream at the end if you want it silky. Swap the shrimp for chicken if you don’t have seafood. Use fresh okra instead of frozen. Cooking is flexible, and this recipe works with whatever you’ve got.
